If you love enchiladas as much as I do, you can't get enough good enchilada recipes. There's just something about this popular dish that seems to embody the spirit of authentic Mexican food, perhaps more than any other. Just think about it: You have chicken enchilada recipes, as well as ones that include pork, beef, and even seafood (such as shrimp). Some enchilada recipes have no meat at all, but which still include one or more from a wide assortment of cheeses. Some vegetarian enchilada recipes forgo the meat - and even the cheese - altogether, but these don't rank high on my list of favorites. No offense to you strict vegetarians, but to me, a true, authentic plate of enchiladas must have a healthy portion of cheese, at the very least. And then there's all the other possible fillings and toppings: green, red, and even cream sauces, and the many variations upon those (can you say chicken enchiladas suizas?) There's sour cream, and ripe (black) olives, cilantro and avocado - I don't know about you, but I'm getting mucha hambre right about now, and we're only getting started! So, if you're looking for the best enchilada recipes, look no further - I hope you can see by now, this is the place. However, I'll admit it right up front: I'm a bit of a Mexican food snob! I grew up in Las Cruces, New Mexico, and - together with many family members and friends - regard it as having the best Mexican food in the world. In my humble opinion - and I've sampled Mexican/"Southwestern" food from many areas - the places that serve authentic Mexican food are few and far between. But I expect to hear some disagreement on this. Well, my blog is now up and running (see link below), so don't be shy to post your comments, and even your own enchilada recipes. Together, we'll have some fun, share some great recipes, and hopefully discover some great Mexican food together. By the way, here's a cookbook with some great enchilada recipes, and quite a few other very good Mexican food recipes. I've yet to try them all and obviously, you'll find quite a bit more than just enchilada recipes, but it looks like a winner to me so far. I'm eager to hear your thoughts on this cookbook, so if you do order it, please post any comments you might have on my blog. Thanks in advance!
