If you're anything like me, you can't get enough good enchilada recipes. There's just something about this versatile dish that seems to embody the spirit of authentic Mexican food, perhaps more than any other. Just think about it: You have chicken enchilada recipes, as well as ones that include pork, beef, and even seafood (such as shrimp). Some enchilada recipes have no meat at all, but which still include one or more from a wide assortment of cheeses. There are enchilada recipes for vegetarians which omit the meat - and even the cheese - altogether, although admittedly, these don't rank high on my list of favorites. For me, an authentic serving of enchiladas must have at least a healthy portion of cheese - no offense to you vegetarians out there. Plus there's all the other possible fillings and toppings: green, red, and even cream sauces, and the many possible combinations and/or variations on those (can you say chicken enchiladas suizas?) There's sour cream, and ripe (black) olives, cilantro and avocado - I don't know about you, but I'm getting mucha hambre right about now, and we're only getting started! Anyway, I think you're beginning to see that if you're looking for great enchilada recipes, you've come to the right place. But before going any further, I'll confess: I'm more than a bit picky regarding Mexican food! I hail from Las Cruces, NM, and consider it (along with many friends and family members) the Mexican food capital of the world. In my humble opinion - and I've eaten "Southwestern"/Mexican food in many parts of the world - there's little, if any truly authentic Mexican food elsewhere. But I expect to have some dissenters on this. Well, my blog is now up and running (see link below), so don't be shy to post your comments, and even your own enchilada recipes. Together, we'll have some fun, share some great recipes, and hopefully discover some great Mexican food together. In fact, I've found a nice collection of Mexican food recipes, including some very good enchilada recipes. I've yet to try them all and obviously, you'll find quite a bit more than just enchilada recipes, but it looks like a winner to me so far. I'm eager to hear your thoughts on this cookbook, so if you do order it, please post any comments you might have on my blog. Thanks in advance!
